Brewing Coffee at Home

To get the best home brewed coffee, follow these simple guidelines:

Use filtered or spring water. Since 95% of coffee is water, using the
purest water will create the truest coffee.

Use freshly ground coffee. If you do not wish to grind it yourself,
buy only enough for a week at a time and store it appropriately.

Use the correct grind for your brewing method. The proper balance between releasing the coffee's flavourful oils and yet avoiding bitterness with overextraction differs between methods. Your Roaster can tell you which grind is right for your method.

Use enough ground coffee. We recommend 2 tablespoons per cup for the perfect cup of coffee.

Use a thermal insulated carafe to hold the coffee. Never leave coffee on a burner more than 20 minutes.

Storing Coffee

To maintain the fullest flavour, fresh-roasted coffee should be stored in a dry place in an airtight container.

If you must store the coffee for longer than a week, keep it in the freezer. Freezing tends to weaken especially the flavour of dark-roasted coffees, so the best flavour option is to buy smaller amounts of fresh roasted coffee more frequently. Taking coffee from the freezer can cause condensation, so the best way is to store what you'll use over the week in an airtight jar on the counter. Never refreeze coffee once it has been thawed. Due to surface area exposed to air, ground coffee will lose it's flavour much faster than whole beans, so to get the most from your coffee, enjoy the ritual of grinding your own every morning.
